Obtained from plants of Trebbiano and Malvasia Bianca over 40 years old. The winestays in contact with the skins for a few days and is then ripened on the lees throughout the winter.

The grapes used to produce our rosé come from the freshest areas of our vineyards. After a brief maceration with the skins, the wine matures on the lees throughout the winter.

Simple wine characterized by a pleasant drinkability. The grape varieties are mainly Sangiovese and Canaiolo, with small percentages of Tuscan varieties such as Ciliegiolo, Bonamico and Malvasia Nera.

Chianti Classico Ottomani d.o.c.g. is produced with clusters of Sangiovese from our vineyards located in Strada in Chianti area. Fermented and refined in cement vats as tradition dictates.

Our Sangiovese Amphora is a selection of the best Sangiovese clusters in our vineyards. Fermented and ripened all winter in terracotta amphoras of Impruneta. Partially vinified in whole clusters and macerated for long periods.

Our IGT Amphora Antique Varieties is a selection of the best clusters of Canaiolo, Colorino, Ciliegiolo and Malvasia Nera from our vineyards. Fermented and refined all winter in Impruneta terracotta amphoras. Partially vinified in whole clusters and macerated for long periods.

The Sangiovese chosen for this wine is a careful selection of the best Sangiovese clusters from our oldest vineyards. After a maceration of about 40 days in cement vats, the wine is refined for 18 months in Tuscan oak barrels.

Canaiolo is an ancient typical Tuscan grape variety, traditional from Chianti, from which are obtained wines with a unique phenolic and aromatic profile. We have recuperated some vineyards, more than 50 years old, and we have rediscovered their incredible qualities in this limited production.

The long drying of the grapes, first in the vineyard, then suspended for a few months, ensures a natural sugar residue to the wine. For three years, the wine ferments slowly during the summer periods and rests in the winter periods inside “Caratelli”, traditional small Tuscan casks.

Produced exclusively from the olives of our olive groves, located in Chianti, a historic land of high quality wine and oil production, our E.V.O. oil is the expression of the four maini ndigenous varieties: Moraiolo, Frantoio, Leccino and Coreggiolo. Olives are crushed within 12 hours of harvest, and cold (18-22°) extraction is done only by mechanical means.
